Discover our no-fail itinerary for a thirst-quenching, satisfying solo escape through Simcoe County this year.
Stop 1: Gibson & Co.
Where: 93 Hurontario St. Unit 3, Collingwood, ON. (View Map)
First stop: coffee…and breakfast if you please!
Gibson & Co. is tucked back in a narrow avenue but opens up to a world of smells and tastes as soon as you walk inside. Order up a cortado (trust us) and something to eat like their avo-toast and grab a table.
This spot has all the great vibes you look for in a café (seriously, we could spend hours here). Bring a book, do some work, or just kick back and relax. This is your adventure and you aren’t on anyone’s schedule!
Psst! Love this spot and want to come back? In the afternoons and evenings they also have a great selection of wine, beer, and cocktails to enjoy too.
Stop 2: Scenic Caves Natural Adventures OR Scandinave Spa
It’s your turn to choose! Do you want a little adventure in the great outdoors or do you want to be pampered and relaxed? Choose accordingly (or do both)!

Book your time at Scandinave Spa Blue Mountain in advance to avoid disappointment and enjoy Mother Nature as you explore warm pools and saunas, fires, cold plunges, eucalyptus steam baths and more.
Want something extra special? Before you go in, consider checking out the complimentary Forest Bathing Trail on site (takes about 20-30 minutes, you can grab a guide at the welcome centre) or book one of five different types of massages.
Stop 3: 1858 Caesar Bar

After all that hard work (or not!), you deserve a drink. Pull a stool up to the bar at 1858 Caesar Bar and choose one of their crazy craft caesars to enjoy.
Consider this your first dinner. Whether you order the bacon and eggs Caesar (it is what it sounds like), The Tennessee Holler with Nashville hot beef and bacon, or something like the Beet Drop vegan Caesar- you’re sure to leave full but also wanting to try the entire menu. Can’t decide? Try one of their caesar flights!
Before you leave, stock up on your fav rimmers and elixirs to recreate some of the magic at home.
On to your next delicious eatery. Not ready yet? Check out some of the adorable shops on Hurontario Street. You’re sure to find a keepsake or two.
Stop 4: Black Bellows Brewery

Juuuust down the street, we’re talkin’ a 4-minute walk, Black Bellows Brewery serves up fantastic craft brews made in house and a regularly changing menu of eats worth checking out.
You’ll love them for their reliable classics like their chicken wings as well as their other menu items like goulash, chicken and waffles, and their rip n’ dip pita. Ask your server for some pairing options- we’re sure they have some great beer recommendations.
