THREE CHEFS. THREE VISIONS. THREE NATIONS. NINE COURSES

Field & Feast returns on Saturday, September 10th at Springfield Farm in Applehill, Ontario. The 9 course meal will be prepared by three very different (and very talented!) chefs with three unique approaches to culinary experiences.

Chef JP McMahon, a chef, restaurateur and author. He is culinary director of the EatGalway Restaurant Group, which comprises of Michelin-starred Aniar Restaurant, award-winning Spanish restaurant Cava Bodega, and Tartare Café &Wine Bar (Bib Gourmand). JP is committed to the educational and ethical aspects of food, to buying and supporting the best of local and free-range produce, and engaging directly with farmers and producers.

Chef Joseph Shawana is redefining the food of his culture by going to the roots of what Indigenous food really is – using a pre-colonial approach and techniques have won him acclaim and awards including 2021 the Glenfiddich Chef of the Year Award. As Odawa, part of the Three Fires Confederacy, Joseph was born and raised in Wikwemikong Unceded Indian Reserve located on Manitoulin Island in Ontario, Chef Shawana is currently the chair of ICAN, the Indigenous Culinary of Associated Nations.

Chef Chris Commandant is a graduate of Le Cordon Bleu culinary school with over 20 years of experience in the culinary industry, Chris has used his skills in both post-secondary education, as the former Indigenous Pre-Apprenticeship Coordinator for his local community college, and further involvement in Ottawa’s culinary scene at a national capacity. Chef Commandant is the Sous Chef at the 1 Elgin Restaurant, National Arts Centre, Ottawa.

If that doesn’t entice you enough, they’ve just launched the menu! On it you’ll find treats like Irish Oysters topped with Irish Whiskey, Springfield Farm Honey & Irish Kelp; Burnt Cedar and Birch Syrup Honey Glazed Leg of Grouse with Three Sister Succotash and Fire Roasted Squash Puree; and Woodruff Custard with Seasonal Fruit and Oat Crumble.
