This winter, join woodworker David Schonberger in the award-winning Tree to Table experience to discover the forest. You’ll start your day gathered around a warm fire as Dave treats you to a local-specialty (no spoilers) and sets the scene. Next, you’ll head into the forest behind his property to enjoy the sites and sounds of the Carolinian woods in winter.

Along the way, Dave will point out the type of wood he uses to craft his artisan charcuterie boards, making note of the imperfections that make his boards so special. You’ll engage all your senses as you smell, listen and see the woods and even enjoy a foraged tea among the trees.

Next, it’s time to head back to the wood shop to craft an artisan charcuterie board yourself! You’ll select your perfect piece of raw, sustainably harvested lumber to work with. Dave will guide you through over forty steps to bringing your board to life as you work with the same tools he does every day and a few special ones from Dave’s grandfather.

Finally, when your boards are finished you’ll tag them with leather chord and be sent on your way to enjoy them at home! Not without one final parting gift though. Dave has curated a delicious tasting box to bring your board to life featuring all of his local favs! If you’re looking for a cozy downtown spot to enjoy some nibbles and a glass of vino or specialty coffee, check out Nectar Coffee Bar. If you’re looking for breakfast, we highly recommend grabbing a cappucino to enjoy on their heated patio or in the front window alongside their cinnamon maple Dutch-style crepes or smoked salmon and cream cheese bagel.

Coming later in the day? No worries. Their sandwich list leaves little to be desired (try the sundried tomato and brie) or indulge in a Nectar signature flatbread complete with fig preserve, caramelized onions, goat cheese, arugula and balsamic glaze. If you’re with friends, we recommend also splitting a cheese board for two! You can even pair it up with a flight of Ontario craft beer.

Over at the Mill Inn & Eatery, pub food is the name of the game and man, is it ever tasty. Grab a table with a view of the Otter Creek (extra beautiful when dusted with snow) and get ready to chow down. We love their poutine topped with Gunn’s Hill cheese curds, their grilled chopped pork chop or their classic Reuben on rye bread. Before you go, check out their schedule of events at Paddy’s Underground (the event venue downstairs) where you can catch loads of great live music.

Pick up some accompaniments like crackers and chutneys to create your perfect winter picnic. Just down the road from Nectar, Betty’s Marketplace offers a mix of local and thrifted goods. Think locally harvested honey, preserves, soaps and kids clothing.

Finally, if you’re willing to walk a few minutes from the main drag (under ten minutes from Nectar), The Tillsonburg Station Arts Centre doesn’t only boast beautiful galleries featuring a rotating selection of exhibits but they also have a great giftshop that showcases pieces created by their members. You can shop handmade gifts that range in selection from pottery mugs and bowls to painted postcards, handknit scarves and more.

Zen or Zany Ingersoll

Ingersoll is a charming town with a rich history rooted in dairy farming. Known as the birthplace of cheese in Canada, it offers visitors a delightful mix of heritage attractions, boutique shopping, and cozy eateries.

Explore the area’s rich dairy and cheesemaking heritage at the Ingersoll Cheese Museum. You’ll learn the story of The Mammoth Cheese— a wheel of cheese made in Ingersoll in the 1800s that weighed a whopping 7300 lbs and don’t forget to snap a photo with the replica before you leave.
