Welcome to Durham Region! This is a special place where rural hospitality collides with urban ingenuity. Seasoned chefs are serving up the finest food inspired by the innovation, hard-work and creativity of local farmers.

Join us in the orchard at Slabtown Cider Co. to meet the people creating change in Ontario's food and drink space and indulge in creations by some of the best chefs in Ontario.

MEET THE CHEFS

Chef Alex Page
Chef Alex has been working professionally as a chef for the past ten years, teaching cooking classes across Durham Region and the Greater Toronto Area. His love for locally-sourced ingredients throughout Durham Region inspires recipes that are accessible and simple to recreate in your own home. He believes that when we use high-quality ingredients, we can practice simplicity in the kitchen and still enjoy elevated dishes. Chef Alex is the man behind the Dishing up Durham Instagram Series and is also the instructor for the new “Farm to Table Tourism” Course at Durham College. He is also the host of a new up and coming show called, “The Roaming Chef”, which will be featured on Bell Fibe TV1.
Roger Searle
Hawley Crescent Catering
Chef Roger Searle brings a wealth of culinary knowledge, experience, and leadership to the team. He is a flavour profiler, well versed in exotic food preparation but equally comfortable with simple, straightforward cooking, with a passion and respect for quality, wholesome ingredients. Inspired by bold flavours and a love for international cuisine, Roger loves to take on ethnic styles and add his unique spin to the dish. He has a “Make It Happen” attitude, loves the challenge, and is willing to take on any style of cooking to add to his repertoire.
Timothy Pentz
Hawley Crescent Catering
Timothy is a Red seal chef with almost 20 years of experience in upscale from scratch kitchens and is currently the Executive Chef at Hawley Crescent Catering. When he is not with his three young boys, he loves making people happy with every bite.
Michael Crockford
Urban Pantry
Chef Michael Crockford's passion for culinary combined with his 20-year professional experience in the industry makes him one of Durham’s top chefs. After spending numerous years working & training with chef Mark McEwan at North 44, he ran the kitchen at Oro, an Italian fine dining Toronto restaurant, before moving north to head the kitchen at Urban Pantry. Farm-to-table has always been his desired style of cuisine. Locally sourced ingredients, clean + environmentally sustainable farming + fishing are all of importance when choosing which ingredients to use at the restaurant; and how wonderfully this can be achieved when the restaurant is surrounded by all these beautiful farms. Crockford’s talent, hard work and dedication has helped earn a number of recognition awards to Urban Pantry including being voted Durham’s top fine-dining restaurant in 2021.

with spicy braised greens and cider braised crispy pigs ears

Turmeric and Local Honey Roasted Cauliflower
with Slabtown Cider braised radicchio and rapini, five spice rubbed Ontario pork tenderloin, Ontario peach chutney, and little leaf micro greens

The Venue

Slabtown Cider Co. might be new but the roots of their heritage run deep. Founded in 2017, Slabtown is a family-owned and operated cidery and orchard. Located on the Oak Ridges Moraine just south of Uxbridge and surrounded by forest, trails and rolling fields. They have been working very hard to revitalize over 90 acres of historic fields into one of Canada’s largest collections of unique heritage heirloom apple cider varieties.
