MEET THE CHEFS
Chef James Eddington
Eddington's of ExeterJames was named to the Ontario Hostelry Institute’s 2007 LIST OF TOP 30 UNDER 30 hospitality professionals, and has lived up to the honor. He is very involved in both local and regional tourism, is a board director with Fanshawe College’s Tourism department, chairs Exeter’s BIA, and has done some culinary journalism as well. Not to mention making Eddington’s the fantastic and award-winning destination restaurant it is today!
Chef Frank Ihrig
Hessenland Inn and WineryChef Ihrig immigrated to Canada from Germany as a child with his parents, Christa and Ernst Ihrig. His family settled in Huron County and opened Hessenland, a business that combined their passion for hospitality with their hobby of horse breeding. After years of formal study in the culinary arts and working as a Chef all over the world, Frank moved back to Canada with his wife Liz to gradually take over the reins at the farm. Today, Hessenland boasts expansive gardens, dining rooms, accommodations, 5 acres of vineyard, and the unique Coach House reception hall.
Chef Peter Gusso
Part II BistroPart II Bistro, owned and operated by Peter and Sarah Gusso, began as a dream after many years spent travelling abroad, absorbing as much culinary knowledge as possible. Once they returned to their hometown of Blyth, Peter and Sarah knew it was time to make that dream a reality, and opened Part II in Blyth. After successfully operating for 7 years, they closed the doors in 2018 in Blyth and opened Part 2 in Goderich, located at 10 Courthouse Square. Seamlessly combining casual and fine dining, Part II Bistro is a local hot-spot for great food, great drinks, and great gatherings.Peter and his catering team are also available for weddings, galas, birthdays, tastings, and private functions.

The Venue
Eddington's Farm encompasses a breathtaking 25 acres of pristine soil along the shores of Lake Huron. It operates as a commercial farm with 15 acres dedicated to rotational crops, including corn, edible beans, and wheat. The farm takes immense pride in cultivating and offering 25 varieties of fruits and vegetables, which are served with great enthusiasm at the restaurant. The property, formerly an art studio belonging to the renowned stained glass artist Christopher Wallace, has been beautifully restored to its natural state. One of the prominent features is the stained glass studio, now transformed into a seedling greenhouse. The farm boasts an array of exotic apples, plums, quince, kiwis, and even blood peaches, passed down from previous generations. Among the bountiful harvest are fresh garden greens, winter root vegetables, nightshades, herbs, and seasonal berries, which always remain favorites among patrons. Eddington's takes immense pride in its commitment to being "farm to table," ensuring that the produce served is truly fresh and sourced directly from their own fields.
