What’s your favourite seasonal ingredient? 

My favourite ingredient is Lake Erie perch. It is very fresh and great on almost everything!

What’s your drink of choice?  

My drink of choice is a glass of Ontario chardonnay — also Ontario craft beer, like the Beer Devil IPA [by the Niagara Brewing Company]. 

Most underrated ingredient?  

I think the most underrated are fresh herbs. It has become so easy to buy dried herbs that we forget how much better fresh herbs taste.

Off-duty, what are you most likely to be cooking at home? 

Homemade burgers or fresh fish and chips are staples when I cook at home!

What’s the best part of working with Ontario food and drink? 

We can follow each product from the seed and know that it has not travelled across the ocean. The freshness is exceptional.
