The Dining Room, a warm, inviting space with views into the kitchen through an open archway, opens onto an expansive outdoor area overlooking lush gardens. This setting enhances the authentic farm-to-table experience.
Chef Ponzo, with over two decades of award-winning culinary experience, brings his passion for sustainable farming and nose-to-tail butchery to every dish. He has honed his skills at esteemed Toronto institutions like Canoe, Crush Wine Bar, and Le Sélect Bistro, where he served as Executive Chef for 11 years. His love for food, deeply influenced by time spent in his Nonna Maria’s kitchen in Sardinia, continues to drive his culinary creations today. When not at The Royal, he tends to the Ponzo Family Farm with his wife Marlise and their three children.
