The Fairmont Chateau Laurier in Ottawa, ON has appointed a new Executive Chef!
Chef Louis Simard has over 15 years of culinary experience to bring to guests at the historic castle.A� At the age of 12 Chef Simard began his culinary career at a bistro in his hometown of Saint-Donat, QC, working under a French chef.A� He trained at the Quebec Institute of Hospitality and Tourism in Montreal and has worked at the Fairmont Royal York in Toronto, the Fairmont Banff Springs in Banff, AB and the Fairmont Miramar in Santa Monica, CA.A� In California, Chef Simard had the pleasure of cooking for a number of celebrities, including Donald Sutherland and Woody Harrelson.
In 2009, Chef Simard joined the Fairmont Waterfront in Vancouver as Executive Sous-Chef, and moved up the ranks to acting Executive Chef.
Chef Simard’s cooking philosophy is characterized by out of the box ideas, bold flavours and fresh and delicious ingredients.
