Taste Tested: Vietnamese Smoked Whitefish Salad

Yes, this a salad recipe that takes its cues from Gwyneth Paltrow. Stay with me. This Vietnamese-style chopped salad is packed with all the flavours and colours of the rainbow. Studded with beautiful maple smoked whitefish (we picked ours up at Norm’s Smokehouse in Haliburton) and Picard’s peanuts, this salad is hearty enough to enjoy as a main course and yet still virtuous enough to have a second helping of dessert. Vietnamese Smoked Whitefish Salad
Serves 6
This recipe is infinitely adaptable. Try subbing maple syrup for the honey in the dressing, Ontario tofu for the whitefish, or your favourite Asian green in place of bok choy.

  1. 4 Ontario bok choy
  2. 2 cups Ontario snow peas, cut into 1 inch pieces
  3. 1 bunch Ontario watercress
  4. 2 large Ontario carrots, peeled and thinly sliced into rounds
  5. Small handful Ontario basil, mint, cilantro, roughly chopped
  6. 1/2 small Ontario cucumber, peeled and thinly sliced into rounds
  7. 1 large head Ontario butter lettuce
  8. 1 piece smoked Ontario whitefish, flaked into large pieces
  9. 1/2 cup Ontario peanuts
Vietnamese dressing
  1. 1/4 cup lime juice
  2. 1 TBSP rice wine vinegar
  3. 2 tsp soy sauce
  4. 1/4 cup fish sauce
  5. 1/2 tsp sea salt
  6. 1/4 tsp toasted sesame oil
  7. 1 red Thai chili, thinly sliced
  8. 2 TBSP Ontario honey
  9. 1 tsp ginger, minced
  10. 1 tsp Ontario garlic, minced
  11. 2 TBSP Ontario red onion or shallot, minced
  1. Toss vegetables together with half of the peanuts and the whitefish.
  2. Shake together all ingredients (mason jars are perfect for this...among their many talents) for dressing.
  3. Add dressing to salad ingredients and toss to coat.
  4. Serve sprinkled with remaining nuts.
