“While I may have grown up stomaching smoked mackerel — Whitefish is by far my favorite Ontario lakefish. AWhen done right, it’s full of flavour yet delicate with that perfect flaky texture that’s magically not dry. AIt lends itself beautifully to smoking, as the guys at Hooked Inc. & Fisherfolk will tell you — and bonus, it’s Ocean Wise certified! AThis little salad makes a great open faced sandwich, but also dresses up nice for an evening affair — just add blini!”
