Taste Tested: Niagara Peach Mimosa

With fresh Ontario peaches still in hand, we proclaim summer’s not over yet! What better way to protest the on coming autumn than fresh Niagara peach mimosas? TasteTestednew3 “I love Ontario bubbles. Winemakers in this province are getting more and more creative with their wines,– and since The County and Niagara share the same climate, limestone-based soils and grape varieties as the Champagne region of northern France, conditions are ideal for homegrown bubbly.  While I love them on their own, sometimes a girl just wants some fruit in her wine — and so, this peach mimosa was born.  The dry yet refreshing finish of Kew Vineyards Blanc De Noir seemed like a lovely little match for the sweet and saucy peaches in this recipe — just don’t tell them I said so!” 10598797_569217716533937_1270194604_n
Peach & Basil Mimosa

Don't have fresh basil kicking about? Skip it or sub it! This would be equally sublime with fresh thyme or even tarragon! In a hurry?

Ingredients
  1. 4 sprigs fresh Ontario basil
  2. 1 soft Niagara peach, peeled, pitted, sliced thinnly
  3. 1 bottle Ontario sparkling wine (Try Tawse Spark, Hinterland Whitecap or Kew Vineyards Blanc De Noir!)
Instructions
  1. Reserve 8 slices of peach for garnish, pulse remaining peach with a hand blender until smooth.
  2. Add 1 tsp of peach puree to bottom of 4 flutes or stemless wine glasses.
  3. Top with sparkling wine.
  4. Add 2 slices of peach to each glass.
  5. "Smack" basil between your palms to release oils and add to cocktail.
  6. ENJOY!
Notes
  1. We added ice because it was an abnormally warm day. Typically, if you're bubbly is properly chilled, there should be no need.
