Taste Tested: Lamb Kofta

Need an easy and impressive idea for your next BBQ? Ewe got it! Add a little Middle Eastern flare with these super simple lamb meatballs! TasteTestednew3 “Kofta are basically fancy middle eastern meatballs. Half the recipes I read for these delicious mint-y, garlic-y concoctions call them Turkish, the other half alternate between Moroccan, Lebanese, Afghani or Israeli.  Whatever their origins, they’re delicious and really simple to make.  Just mix, chill, pat and grill.  That’s it! Serve them with tzatziki for a cooling effect or pound ‘em into large patties and make Kofta burgers (topped with a lovely Ontario goat cheese perhaps?) for an easy summer crowd pleaser!” 2014-08-25 09.20.53 1
Vietnamese Smoked Whitefish Salad
Serves 6
This recipe is infinitely adaptable. Try subbing maple syrup for the honey in the dressing, Ontario tofu for the whitefish, or your favourite Asian green in place of bok choy.

Ingredients
  1. 4 Ontario bok choy
  2. 2 cups Ontario snow peas, cut into 1 inch pieces
  3. 1 bunch Ontario watercress
  4. 2 large Ontario carrots, peeled and thinly sliced into rounds
  5. Small handful Ontario basil, mint, cilantro, roughly chopped
  6. 1/2 small Ontario cucumber, peeled and thinly sliced into rounds
  7. 1 large head Ontario butter lettuce
  8. 1 piece smoked Ontario whitefish, flaked into large pieces
  9. 1/2 cup Ontario peanuts
Vietnamese dressing
  1. 1/4 cup lime juice
  2. 1 TBSP rice wine vinegar
  3. 2 tsp soy sauce
  4. 1/4 cup fish sauce
  5. 1/2 tsp sea salt
  6. 1/4 tsp toasted sesame oil
  7. 1 red Thai chili, thinly sliced
  8. 2 TBSP Ontario honey
  9. 1 tsp ginger, minced
  10. 1 tsp Ontario garlic, minced
  11. 2 TBSP Ontario red onion or shallot, minced
Instructions
  1. Toss vegetables together with half of the peanuts and the whitefish.
  2. Shake together all ingredients (mason jars are perfect for this...among their many talents) for dressing.
  3. Add dressing to salad ingredients and toss to coat.
  4. Serve sprinkled with remaining nuts.
