It’s crispness and bright acidity make it easy drinking but impressive. Cave Spring Blanc de Blancs Brut Sparkling VINTAGES# 213983 | 750 mL bottle In 2012, Cave Spring wine was awarded awarded a Lieutenant-Governor’s Award for their Blanc de Blancs Brut Sparkling. Since then, every vintage has maintained the quality and complexity expected of it. It’s heavy on the orchard fruit notes, crisp and dry.
Henry of Pelham Cuvée Catharine Rosé Brut VQA LCBO# 217505 | 750 mL bottle This pink sparkler smells like breakfast in the south of France. There are notes of brioche, wild strawberry and lemon curd. It’s creamy and pairs great with brunch. 13th Street Cuvée Brut Rosé VINTAGES# 147504 | 750 mL bottle 13th Street was one of the pioneers of Ontario sparkling, having releases their first in 1998. This one is a classic, year after year. It’s dry, fruity with the tiniest bubbles carrying the sweet scents of berries and fresh bread. Hinterland Ancestral Sparkling LCBO# 426023 | 750 mL bottle This is the fruit salad of sparkling wines. We’ve gotten everything from watermelon to cranberry, cherry and ripe strawberry. Anything pink, essentially! It’s refreshing and festive. Featherstone Joy Premium Cuvée Sparkling Rosé 2015 VINTAGES# 450700 | 750 mL bottle The delicate strawberry, cherry, and rhubarb notes on this pink fizz bring us joy. See what we did there? In all seriousness though, this is a lovely example of the mineral-forward wines coming of the Twenty Mile Bench in Niagara. The label is a stunner too!
A Little Outside the Box
Peller Estates Ice Cuvee VQA LCBO# 284547 | 750 mL bottle This is a classic example of Ontario bubbles — loads of pear and apples — but it’s made extra special with an infusion of ice wine in the bottle. The icewine adds loads of spice and honey to the palate. It’s luxurious to say the least! Tawse Spark Brut Sparkling 2014 VINTAGES# 384966 | 750 mL bottle Made with Chardonnay, Pinot Noir and a little unexpected Pinot Gris, Spark carries with it a distinct pink grapefruit character. It’s dry with a pleasant acidity. A very unique wine. Lighthall Progression Sparkling Wine 2014 VINTAGES# 468090 | 750 mL bottle This easygoing bubbly is made using the Charmat method from Vidal grapes grown in the winery’s vineyards in Prince Edward County. It’s sweet and floral, but not cloying thanks to a bright pop of acidity.
