TASTE MAKER: PAUL PENNOCK, NIAGARA PARKS
As the Niagara Parks Director and Executive Corporate Chef Paul Pennock has done wonders for promoting Ontario food and, no surprise given the county, VQA wines. He has been a champion in the industry with creating events that showcase the bounty of his community and bring attention to sustainable and local food initiatives.
Paul draws from a variety of areas for inspiration in his cooking. He has travelled extensively in China, Europe, the Middle East, Mexico and across Canada and the United States. All of these countries with their distinct flavours and ingredients influence his use of Ontario ingredients.
Paul was born and raised in Toronto, which is where he discovered his taste of place, the St. Lawrence Market.
