Meet The Taste Makers: Chef Paul Pennock

pears2-300x300We’re counting down the sleeps to the 2015 Ontario Culinary Tourism Summit happening on November 29th! This years summit is all about those Perfect Pairings — whether it’s local food and wine or sports tourism and craft beer. It will take place in Toronto at The Westin Prince. We’ve put together a line-up of culinary tourism major leaguers who will give us the low-down on their experiences and best practices. In the weeks leading up to the summit we’ll be profiling these taste makers showing you exactly why you should save the date. So on that note, meet the first of our 2015 culinary tourism taste makers!


PaulPennock_headshotAs the Niagara Parks Director and Executive Corporate Chef Paul Pennock has done wonders for promoting Ontario food and, no surprise given the county, VQA wines. He has been a champion in the industry with creating events that showcase the bounty of his community and bring attention to sustainable and local food initiatives. 

Paul draws from a variety of areas for inspiration in his cooking. He has travelled extensively in China, Europe, the Middle East, Mexico and across Canada and the United States. All of these countries with their distinct flavours and ingredients influence his use of Ontario ingredients. 

Paul was born and raised in Toronto, which is where he discovered his taste of place, the St. Lawrence Market. In one market he can find international cooking techniques and the foods of the world that inspire him. We think you’ll be inspired by Paul’s conversation with David Adames and Elbert Wiersema!
