Meet Chef Benjamin Lillico of Holts Cafe

Everyone knows that the best parties always end in the kitchen. With our series, Kitchen Party, we’re sitting down with Feast On Chefs to get to know them, and the local foods that inspire them, a little better.

Wild Leeks / Ramps – Capturing this special ingredient in the spring and being able to share
that throughout the year is extremely rewarding to me

Describe Holts Café in three words:

Elegant, Modern & Energizing

Most underrated ingredient?

Herbs – I use a ton of herbs in my cooking, I love how they can brighten up and finish the flavour & aesthetic of dishes.

Cold Pressed Juices- Super thirst-quenching, fresh & healthy!

What’s your favourite dish to cook at home?

Seafood – I love cooking with sustainable & ethically sourced ingredients, and sharing seafood driven dishes always hits the spot!

What’s the best part about working with Ontario food and drink?

There is such a talented group of individuals that come together to make this happen! I am so thankful to be a part of it – the impactful movements & change that is created only helps strengthen what we do here in Ontario.

Why is Feast On important to you?

Feast On is important to me because it connects me with like-minded individuals on a platform where we are able to share moments about local food movements & initiatives.

Outside of your chef life, how would you describe yourself?

Outgoing! There is never a dull moment, and I always try to have extra projects on the go! I
love getting outdoors & active- staying healthy is super important in having a balanced
lifestyle. I always stay connected with my friends & family and love getting social too (even
at a distance right now).

What’s your perfect weekend in Toronto?

Morning run along the lakeshore, artisan coffee from Queen West, quick shopping at Kensington & St. Lawrence Markets followed by lunch in Yorkville. Back to the waterfront for an afternoon boating trip and closed out with dinner downtown! Toronto is such an amazing city- there is soo much to see & do!
