Ingredients from down the road supported flavours from around the world at this year�s Local Goes Global themed Savour Stratford Perth County Culinary Festival, 21-22 September.
This year�s festival truly captured the essence of Ontario�s cuisine of cuisines.A� The best of Ontario�s local food and beverages starred in preparations and presentations of unique flavours and cuisines from places such as Brazil, Thailand, Peru, Mexico, Trinidad, and India.
From Roger Mooking to Mara Salles, Francisco Alejandri, Elizabeth Rivasplata, and Wing Li, guest chefs narrated their global stories through innovative and creative tastes and pairings.
The highlight for me was the GE Chef Series with Vikram Vij on Saturday.
This intimate, three-hour cooking demonstration and lunch epitomized the fine balance of education, awareness, participation, and entertainment that Savour Stratford is able to achieve.A� Participants were treated to what can only be described as a show by a chef who dreamed of being a Bollywood actor when he was a child.
It may not of been a movie set but the GE Appliances CafA� demo kitchen that Chef Vij made his stage is something a home cook can only dream of.A� Vikram�s nonchalant culinary mastery and personal joy of cooking flavoured his wonderful family-inspired curries of local ingredients�such as pickerel, chicken, lamb, and a diversity of produce.A� These modern Indian dishes were carefully paired with select wines from Chateau des Charmes, and underlined the festival�s ability to create and showcase whole taste experiences.
As pronounced as the flavours that I enjoyed on my plate were, it was later at Taste of Ontario Artisan Alley that local flavours really shined. A�Celebrating the best of Ontario VQA wines, cask beers, spirits, and artisan cheeses� it was a collection of some of the most unique and telling flavours in the province.
My favorite? A�Liquid gold from Pollard & Plante Honey. A�John Pollard is a scientist at the University of Guelph making what could very well be some of the best honey I’ve ever tasted! A�If you weren’t at the festival, you can also get it at the Your Local Market Co-Op.
It was this sense of community, alongside Savour Stratford�s celebration of Women in Food and it’s capacity to instill in each festival attendee a sense of pride for the people, ingredients and tastes, that make Ontario so great.
I truly look forward to attending next year!
