What’s your favourite seasonal ingredient? 
Bacon. Whatever the season, bacon is always a good fit.  What’s your drink of choice?  Ontario craft beer. Whatever catches my attention at the time. I tend to head towards hoppy ales and wheat beers.  Most underrated ingredient?  Ontario cheese. Cheese makes everything better – any and all cheeses!  Favourite restaurant?  The Combine in Simcoe.  (Ed. note – Keeping it in the Feast ON family!) Off-duty, what are you most likely to be cooking at home?  Breakfast. In this business, breakfast is usually the only meal my wife and I have together at home. So I would say good coffee, eggs done any way and good hot sauce. What’s the best part of working with Ontario food and drink? Fresh local products and the fact that you are able to get to know the producers themselves and appreciate their passions. What are you most looking forward to doing in 2016?  Expanding our beer program. We hope to expand to a nano brewery by the summer and be able to sell beer to our customers that they can take home as opposed to only being able to drink a pint at the restaurant. If I entered a competitive eating contest, I’d definitely win if the item was….  Chocolate chip cookies! Favourite road trip in Ontario? Norfolk County. I love the landscape, the cheese, the wine, the beer….and it’s only a couple hours drive from home.  What we’re dying to try?   Their crazy awesome craft beer selection and their burgers, sourced with ground beef from The Butcher of Kingsville. The Spicy Jack (caramelized onions, spicy peppers, smoked bacon, jack cheese and jack sauce) in particular, really speaks to us.   Untitled design (5)
