This week, wea��re sitting down with Ryan Rivard, Chef and Owner of The Combine (and other venues) in Norfolk County.

What’s your favourite seasonal ingredient?
Anything From The Combine Garden! I get to germinate seeds in our greenhouse, transplant, care for the plants throughout the season and harvest… all within 100 yards of the kitchen door.
What’s your drink of choice?
It’s a tie! Beer + Tequila or is it Tequila + Beer?
Most underrated ingredient?
Not a fair question; anywhere that actually makes their own food is what I look for.
Off-duty, what are you most likely to be cooking at home?
Pogo dogs for my 3 year old.
What’s the best part of working with Ontario food and drink?
The myriad of seasonal ingredients and getting to know the farmers who grow our food!

Our Feast On designation confirms and strengthens our guests desire to support local agriculture and those who are dedicated to utilizing sustainable, seasonal ingredients grown close to home.
What does your perfect weekend in Norfolk County look like?
I’d start with Friday night dinner on the patio at The Combine. On Saturday, we’d attend a session with Paul Meiklejohn of Elevation Mountain Biking Camp in Turkey Point. After that, we’d pack up some camping gear and head down the road to Long Point Provincial Park for a night of serene camping on the shores of Lake Erie.
In the morning, we’d do Sunday, Brunch at Lago Trattoria in Port Dover and then off to New Limburg Brewery in Nixon. It’s in an old school, transformed into a modern Belgium Craft Brewery. Really awesome!

The ever-elusive Chef Sandwich. Bread + Butter. Maybe a sprinkle of Maldon sea salt if it’s close by!
