Bees Universe, Boxwood Farms, Kind Organics, Marvellous Edibles, and other vendors at the Evergreen Brick Works Market.
Most underrated Ontario ingredient? Rutabaga. It just doesn’t get used enough.
Favourite seasonal ingredient? Peaches and strawberries.
Ontario protein you most like to cook with? Pork.
All-time favourite Ontario drink? Apple Cider. And beer.
Favourite Ontario restaurant? Cafe Belong.
Guilty food pleasures? Bacon!
Best part of working with Ontario food and drink? I believe in local economy. I’m living here, so that’s what makes sense.
What world cuisines inspire you? What’s the best way to incorporate these influences into your food? I was born in Venezuela, and I cook Mediterranean food with Ontario seasonal ingredients. The best way to do this is through the protein, like pork and lamb. We have so many beautiful things here [in Ontario]. Eat what’s fresh. That’s the beauty of eating where you live.
Pimenton is a vendor at the Evergreen Brick Works Local Food Court. Evergreen started its Farmers Market in 2007 with 25 local farmers and producers, a great location and a great response from the community.
