What’s your favourite seasonal ingredient? 

Morel mushrooms are my favourite seasonal ingredient. Using morels when they are in season adds an earthy, yet smooth element to the dish, making it a perfect balanced ingredient.

What’s your drink of choice? 

Definitely, Merlot. It is such a full bodied, aromatic and complex grape. Cool climate Merlot makes for an easy drinking wine, while old world traditional wine making results in a more robust and intricate drinking wine. Perfection.

Most underrated ingredient? 

Wild leeks  –  they can be prepared utilizing many different cooking methods and will always deliver a really complimentary flavor to many dishes. 

Favourite restaurant? 

Tano passami l’olio located in Milan, Italy. I really respect the chef Tano Simonato’s forward thinking, his philosophy and approach to ingredients. He has eliminated dairy from his dishes. He substitutes dairy, butter and cream in his kitchen with olive oil. Temperature is also key in his culinary method, preserving nutrients as best as possible to create a more digestible meal. I strive to be more like him.

What’s the best part of working with Ontario food and drink?

I like the variety, the quality of the product and the commitment of Ontario producers and growers to produce the best products in new and innovative ways.

Why is Feast On important to you and your restaurant?

Feast On gives a voice and opportunity for restaurants and chefs to feature local ingredients. We want to help put northern Ontario on the culinary map by supporting and promoting the growers and producers from here, while doing the same with our partners across Ontario. Supporting the local economy and local food system is important to the staff and management at Verdicchio Ristorante | Enoteca.

What does your ‘Perfect Weekend’ in Sudbury look like?

Going on hikes with my wife and dog through the trail systems of Sudbury and area.
