For those who love ice wine, sparkling wine, and rose, it turns out you can have it all. These bubbles are a traditional ?mA�thode� sparkling made with hand-picked Pinot Noir and Chardonnay, plus just a touch of Gamay. Just before bottling, they add some ice wine to make it extra special.

hinterlandAncestral 2015 Method 
from Hinterland Winery

Tart and sweet, with notes of ripe cranberries and sour cherries, this is the perfect bottle for pre-dinner drinks. Named for the original way of making sparkling wine, the Ancestral is produced using similar techniques first employed by the monks of Saint-Hillaire abbey in 1531.

A crisp, very elegant traditional method sparkler here made from 100% pinot noir. It’s curiously herbaceous with the slightest of bubbles. Like many of Megalomaniac’s pinots, the grapes for this bottle were harvested early during the season to preserve natural acidity and flavours, and then, ferment very cold in order to keep bright and clean fruit aromas.

Refined, complicated, effortlessly cool, and oh so lady like. This bottle is as appropriate for Sunday Brunch as it is for Friday night cocktails. It’s fruity, dry and pairs with just about everything. Just like a little black dress.

Crisp, dry, and vibrant this County Sparkler offers some definite tart notes too. Think rhubarb, red currant and cranberry. That signature County minerality is also present. This wine makes us long for dill and smoked trout canapes piled high with chevre. We sense a celebration coming on, do you?
