ChocoSols Local Sustainable Tortilla Project celebrates the art of traditional nixtamal stone-ground maize, which we use to make tortillas, nachos, maize drinks and tamales. We integrate the 3 sisters of polyculture (corn, beans and squash) and include edible weeds and companion crops rooted in the terroir of Ontario. Our offerings are a result of learning from Indigenous knowledge and connecting to spiritual ecology, growing traditions and ways of sharing. Each bite is tasty, sustainable, and symbolizes ways that community-supported cuisine is rooted in Indigenous traditions.
