Quetzal is a new restaurant concept that showcases the food of chefs Julio Guajardo and Kate Chomyshyn and introduces Canadians to the huge array of cuisine found in Mexico, specifically Oaxaca, Yucatan, Baja California and other regions known for creating some of Mexico's most iconic dishes. Traditional moles, sauces and little-known native ingredients are transported to Toronto and infused with the bounty of local Ontario and Canadian produce, for a one-of-a-kind dining experience.

Chefs Guajardo and Chomyshyn have spent the past 7 years travelling throughout Mexico, learning traditional techniques from aubelas (grandmothers) and doņas, the matriarchs who are celebrated for creating and developing Mexico's UNESCO-recognized gastronomy and best-loved flavours.
