The Art of Butchery with Jamie Waldron

The Essex County Federation of Agriculture in partnership with Tourism Windsor Essex Pelee Island and Libro Credit Union is pleased to present the first Makers Class in a brand new W.E. Heart Local series this summer. Enjoy hands on experiences with local chefs, producers, growers and butchers to learn why it’s so much better to support local! Join Butcher/Educator/Author, Jamie Waldron, as he demonstrates a full lamb breakdown from Ewe Dell Farms. He’ll go into detail regarding cooking applications and why we should all be doing a little bit more butchery and the benefits to using the whole animal in our home kitchens. Your ticket includes food & cider pairings from Wagner Orchards Event Centre featuring their farm raised meats and Ewe Dell Farms lamb. Wagner’s pride themelves on the quality of their food. In order to showcase the best of our region they use only the freshest local ingredients possible. All the Beef and Pork that we serve is born and raised on their farm with out the use of hormones and antibiotics.
