With the launch of their new lounge spaceA�T|BAR, the Eaton Chelsea has taken on a truly Canadian challenge. A�They’ve chosen their signatureA�cocktail and dubbed itA�Toronto’s best Canadian concoction � yes folks, we’re talking about the almighty Caesar.
James Cushinan, the Eaton ChelseaA�bars & lounges manager, has put his own creative spin in the drink to make it truly an experience. A�Working closely with Chef Brian MacAskill–who makes his own clamato juice fresh from local tomatoes every week–James has created a collection of Caesars fit for a king.
The collection includes heavy hitters like “The Checkout” built on a base of bacon infused vodka and freshly grated horseradish garnished with a cherry tomato, hard boiled egg, more bacon and a pickle spear; as well as OCTA favorite “The T Garden” which swaps in red & green pepper infused gin, fresh cucumber, and a cracked peppercorn rim–hold the bacon.
Other interesting creations include “The Wassaabbii” featuring pickled ginger and a cashew teriyaki rim; as well as the fiery “Latin Dancer” with hits of fresh cilantro, basil, mint and garnished with an Extreme Bean–possibly, though unofficially, Ontario’s favorite pickle.
“It’s all in the house made Clamato” said James when asked what makes his cocktail king. A�”Chef Brian and I did so much trial and error. A�We’re really happy with how it turned out.”
T|Bar is just the start of what’s changing at the Eaton Chelsea. A�With four dining establishments on site–one of which feature’s Ontario sourced and made gelato!–it’s soon to become the place to stay for food loves travelling to Toronto.
